  1. Pare the best Seville oranges, cut the paring a quarter of an inch broad.
  2. If you can keep the paring whole, it looks much prettier.
  3. After paring, put the orange peels in salt and spring water for a day or two.
  4. Boil the peels in a large quantity of spring water until tender.
  5. Drain the peels on a sieve.
  6. Prepare a thin syrup with a quart of water and a pound of fine sugar.
  7. Boil the peels in the syrup (a few at a time to prevent breaking) until they look clear.
  8. Transfer the peels to a syrup made of fine loaf sugar and as much water as will dissolve it.
  9. Boil the peels in this syrup to a candy height.
  10. When taken up, lay the chips on sieves.
  11. Grate double refined sugar all over them.
  12. Put them in a stove, or by the fire to dry.
  13. Keep them in a dry place for use.

To make ORANGE CHIPS. TAKE the best Seville oranges, pare them ant, a quarter of an inch broad, if you can keep the paring whole it looks much prettier, when you have pared them all, put them in salt and spring water for a day or two, then boil them in a large quantity of spring water till they are tender, then drain them on a sieve, have ready a thin syrup, made of a quart of water, and a pound of fine sugar, boil them (a few at a time to keep them from breaking) till they look clear, then put them into a syrup made of fine loaf su gar; with as much water as will dissolve it, and boil them to a candy height, when you take them up, lay them on sieves, and grate double refined su gar all over them, and put them in a stove, or by the fire to dry, and keep them in a dry place for use
