TAKE half a pound of hartshorn shavings, and two quarts of spring water, let it boil till it be reduced to a quart, pour it clear off, let it stand till it is cold, then take half a pint of spring water, and the rind of three oranges pared very thin, and the juice of six, let them stand all night, strain them through a fine hair sieve, melt the jelly and pour the orange liquor to it, sweeten it to your taste with double refined sugar: put to it a blade or two of mace, four or five cloves, half a small nutmeg, and the rind of a lemon, beat the whites of five eggs to a froth, mix it very well with your jelly, set it over a clear fire, boil it three or four minutes, run it through your jelly bag several times till it is clear, and when you pour it into your bag take great care you do not shake it.
