  1. Open the oysters very carefully, and take off all the shells that stick to the fish.
  2. Put the oysters into a little water and wash them in it.
  3. Strain the liquor from the oysters.
  4. Boil the strained liquor with a little vinegar, whole pepper, salt, and mace, till it tastes of the spices.
  5. Put in the oysters.
  6. If the oysters are large they must boil eight minutes, if small not so long.
  7. Put the oysters into pickling pots.
  8. When the liquor is cold pour it upon the oysters.
  9. To half a hundred of oysters put six spoonfuls of water, and four of very good vinegar.
  10. Tie bladders very close over them.

To pickle OYSTERS a second Way. OPEN the oysters very carefully, and take off all the shells that stick to the fish, put them into a little water, and wash the oy sters in it and strain the liquor, boil it with a little vinegar, whole pepper, salt, and mace, till it tastes of the spices, then put in the oysters: if they are large they must boil eight minutes, if small not so long; put them into pickling pots, when the liquor is cold pour it upon the oysters. To half a hundred of oysters put six spoonfuls of water, and four of very good vinegar, then tie bladders very close over them.
