  1. After having well cleansed the head, parboil one half.
  2. Beat up the yolk of an egg, and rub it over the head with a feather.
  3. Then strew over it a seasoning of pepper, salt, thyme, parsley chopped small, shred lemon-peel, grated bread, and a little nutmeg.
  4. Stick bits of butter over it, and send it to the oven.
  5. Boil the other half white in a cloth, and put them both into a dish.
  6. Boil the brains in a piece of clean cloth, with a very little parsley, and a leaf or two of sage.
  7. When they are boiled chop them small, and warm them up in a saucepan, with a bit of butter, and a little pepper and salt.
  8. Lay the tongue, boiled and peeled, in the middle of a small dish, and the brains round it.
  9. Have in another dish, bacon or pickled pork; and in a third, greens and carrots.
