  1. Rub your meat first with common salt, then a little bay-salt, some salt-petre, and coarse sugar.
  2. Let it lay a full week in this pickle, turning it every day.
  3. On the day it is to be dressed, wash and dry it, lard it a little, and make holes, which fill with bread crumbs, marrow, or suet, parsley, grated lemon-peel, sweet herbs, pepper, salt, nutmeg, and the yolk of an egg, made into stuffing.
  4. Bake it with a little water and some small beer, whole pepper, and an onion.
  5. When it comes from the oven, skim.
