  1. Line a pie dish with a good crust.
  2. Put in a layer of apples, dusting these very lightly with brown sugar.
  3. Add a layer of mutton chops well seasoned with pepper and salt.
  4. Add more sliced apple.
  5. Add some thinly sliced onions.
  6. Repeat these layers till the dish is full.
  7. Add one pint of water.
  8. Cover with the crust.
  9. Bake.
  10. Some West country cooks use pork with, or instead of, the mutton.
  11. Strew currants and minced parsley between the layers.
  12. Finish up at the last with a little boiling cream.

Squab Pie.—Line a pie dish with a good crust, then put in a layer of apples, dusting these very lightly with brown sugar, then a layer of mutton chops well seasoned with pepper and salt, then more sliced apple, next some thinly sliced onions, and repeat these layers till the dish is full, add one pint of water, cover with the crust, and bake. Some West country cooks use pork with, or instead of, the mutton, strew currants and minced parsley between the layers, and finish up at the last with a little boiling cream.
