  1. Put the isinglass into a bowl.
  2. Pour a pint of boiling water upon it.
  3. Cover it up till almost cold.
  4. Add a pint of white wine.
  5. Add the juice of two lemons and the rind of one.
  6. Add the yolks of eight eggs, beat well.
  7. Sweeten it to your taste.
  8. Put it in a tossing-pan and keep stirring it.
  9. When it boils strain it through a fine sieve.
  10. When almost cold, put it into cups and moulds.

TAKE two ounces of isinglass, beat it and open it, put it into a bowl, and pour a pint of boiling water upon it, cover it up till almost cold, and add a pint of white wine, the juice of two lemons, with the rind of one, the yolks of eight eggs beat well, sweeten it to your taste, put it in a tossing-pan and keep stirring it, when it boils strain it through a fine sieve, when almost cold, put it into cups and moulds.
