  1. Put one quart of split peas and four quarts of soft water into a pot.
  2. Add a little lean bacon or roast beef bones.
  3. Wash one head of celery, cut it and add it to the pot with a turnip.
  4. Boil until the mixture is reduced to two quarts.
  5. Work the mixture through a cullender using a wooden spoon.
  6. Mix a little flour and water, and boil it well in the soup.
  7. Slice in another head of celery.
  8. Add Chyan pepper and salt to your taste.
  9. Cut a slice of bread into small dice and fry them until lightly browned.
  10. Place the fried bread dice in a dish.
  11. Pour the soup over the bread dice.

To make a Common PEAS Soup. TO one quart of split peas put four quarts of soft water, a little lean bacon, or roast beef bones, wash one head of celery, cut it and put it in with a turnep, boil it till reduced to two quarts, then work it through a cullendar, with a wooden spoon, mix a little flour and water, and boil it well in the soup, and slice in another head of celery, Chyan pepper and salt to your taste; cut a slice of bread in small dice, fry them a light brown, and put them in your dish, then pour the soup upon it.
