  1. Take a handful each of spinach, beets, parsley, and leeks.
  2. Wash the herbs.
  3. Scald them in boiling water.
  4. Shred them very fine.
  5. Have ready a quart of groats steeped in warm water for half an hour.
  6. Have ready a pound of hog's-lard cut into little bits.
  7. Have ready three large onions chopped small.
  8. Have ready three sage leaves hacked fine.
  9. Put in a little salt.
  10. Mix all well together.
  11. Tie it close up.
  12. It will require to be taken up in boiling, to slacken the string a little.

Herb Pudding. OF spinage, beets, parsley, and leeks take each a handful, wash them, and give them a scald in boiling water, then shred them very fine, have ready a quart of groats steeped in warm water half an hour, and a pound of hog's-lard cut in little bits, three large onions chopped small, and three sage leaves hacked fine, put in a little salt, mix all well together, and tie it close up; it will require to be taken up in boiling, to slacken the string a little.
