  1. Slice the inside of a roll in three.
  2. Soak the sliced roll in milk.
  3. Pass the soaked roll through a batter of eggs.
  4. Fry the battered roll in oil until almost done.
  5. Repass the almost-done fritters in another batter.
  6. Let the fritters fry until they are done.
  7. Draw the fritters off the oil.
  8. Lay the fritters in a dish.
  9. Over every pair of fritters, strew cinnamon, small coloured sugar-plumbs, and clarified sugar.

To make Spanish Fritters. SLICE the inside of a roll in three, then soak it in milk; then pass it through a batter of eggs, fry them in oil; when almost done, repass them in another batter; then let them fry till they are done, draw them off the oil, and lay them in a dish; over every pair of fritters, strew cinnamon, small coloured sugar-plumbs, and clarified sugar.
