  1. Slice the cucumbers.
  2. Peel and cut the onions in thin slices.
  3. Fry both the cucumbers and onions until brown.
  4. Drain the fried cucumbers and onions and pour out the fat.
  5. Return the cucumbers and onions to the pan.
  6. Add three spoonfuls of hot water.
  7. Add a quarter of a pound of butter rolled in flour.
  8. Add a teaspoonful of mustard.
  9. Season with pepper and salt.
  10. Let them stew softly for a quarter of an hour, making the pan often.
  11. When they are cooked, dish them up.

TAKE fix large cucumbers, slice them; take fix large onions, peel and cut them in thin slices, fry them both brown, then drain them and pour out the fat, put them into the pan again, with three spoonfuls of hot water, a quarter of a pound of butter rolled in flour, and a teaspoonful of mustard; season with pepper and salt, and let them stew a quarter of an hour softly, making the pan often. When they are enough, dish them up.
