  1. Melt the butter in a saucepan and cook the onion until soft.
  2. Add the veal and salt pork, and cook until the meat is browned.
  3. Season with salt and pepper.
  4. Remove from heat and let cool slightly.
  5. Stir in the beaten egg and bread crumbs.
  6. Shape the mixture into small cutlets.
  7. Dip each cutlet in flour, then in beaten eggs, and finally in bread crumbs.
  8. Fry in hot lard or butter until golden brown on both sides.
