- Melt the butter in a saucepan and cook the onion until soft.
- Add the veal and salt pork, and cook until the meat is browned.
- Season with salt and pepper.
- Remove from heat and let cool slightly.
- Stir in the beaten egg and bread crumbs.
- Shape the mixture into small cutlets.
- Dip each cutlet in flour, then in beaten eggs, and finally in bread crumbs.
- Fry in hot lard or butter until golden brown on both sides.
