  1. Take the egg plants, remove the stems, split them in halves or quarters.
  2. Steep them in warm butter, season them with pepper and salt, a little mustard, and chopped lean ham or bacon.
  3. Sprinkle them lightly with freshly made white breadcrumbs.
  4. Grill or broil for eight to ten minutes till a nice golden colour.
  5. Dish up on a hot dish, pour a little warm butter round, and serve hot.

Egg Plants Broiled or Grilled. (Aubergines grillées.) Take the egg plants, remove the stems, split them in halves or quarters, steep them in warm butter, season them with pepper and salt, a little mustard, and chopped lean ham or bacon, and sprinkle them lightly with freshly made white breadcrumbs and grill or broil for eight to ten minutes till a nice golden colour, then dish up on a hot dish, pour a little warm butter round, and serve hot.
