  1. Take a brace of trout, and lard them with eels.
  2. Raise the crust, and put a layer of fresh butter at the bottom.
  3. Make a forcemeat of trout, mushrooms, truffles, morels, chives, and fresh butter.
  4. Season them with salt, pepper, and spice.
  5. Mix these up with the yolks of two eggs.
  6. Stuff the trout with it.
  7. Lay them in the dish.
  8. Cover them with butter.
  9. Put on the lid, and send it to the oven.
  10. Have some good fish gravy ready.
  11. When the pie is done, raise the crust, and pour it in.

TAKE a brace of trout, and lard them with eels; raise the crust, and put a layer of fresh butter at the bottom. Then make a forcemeat of trout, mushrooms, truffles, morels, chives, and fresh butter. Season them with salt, pepper, and spice; mix these up with the yolks of two eggs; stuff the trout with it, lay them in the dish, cover them with butter, put on the lid, and send it to the oven. Have some good fish gravy ready, and when the pie is done, raise the crust, and pour it in.
