  1. Cut some thin slices of the lean part of a dressed ham, and beat it with a rolling-pin to a mash.
  2. Put it into a saucepan, with a tea-cup full of gravy, and set it over a slow fire: but keep stirring it to prevent its sticking at the bottom.
  3. When it has been on some time, put in a bunch of sweet herbs, half a pint of beef gravy, and some pepper.
  4. Cover it close, let it stew over a gentle fire, and when it is quite done, strain it off.

Ham Sauce. CUT some thin slices of the lean part of a dressed ham, and beat it with a rolling-pin to a mash. This is a very good sauce for any kind of veal.
