  1. Make a light dough with flour, water, yeast, and salt, as for bread.
  2. Cover the dough with a cloth and let it rest by the fire for half an hour.
  3. Have a saucepan of water on the fire, and when it boils, take the dough.
  4. Make the dough into round balls, as big as a large hen's egg.
  5. Flatten the balls with your hand.
  6. Put the flattened balls into the boiling water.
  7. A few minutes will cook them.
  8. Take care that they do not fall to the bottom of the pot or saucepan, as in that case they will be heavy.
  9. Keep the water boiling all the time.
  10. When they are cooked, take them up and lay them in your dish.
  11. Serve with melted butter in a boat.

MAKE a light dough with flour, water, yeast, and salt, as for bread, cover it with a cloth, and let it before the fire for half an hour. Then have a saucepan of water on the fire, and when it boils, take the dough, and make it into round balls, as big as a large hen's egg. Then flatten them with your hand, put them into the boiling wa- ter, and a few minutes will do them. Take care that they do not fall to the bottom of the pot or saucepan, as in that case they will then be heavy, and be sure to keep the water boiling all the time. When they are enough take them up, and lay them in your dish, with melted butter in a boat.
