  1. Cut about a pound and a half of veal into thin slices.
  2. Cut about a quarter of a pound of cooked ham into thin slices.
  3. Season the veal rather highly with white pepper and salt.
  4. Cover the bottom of the dish with the seasoned veal.
  5. Lay over a few slices of ham.
  6. Add the remainder of the veal.
  7. Finish with the remainder of the ham.
  8. Add a wineglassful of water.
  9. Cover and bake as directed for the beefsteak pie.
  10. A bay leaf will be an improvement.

Veal and Ham Pie.—Cut about a pound and a half of veal into thin slices, as also a quarter of a pound of cooked ham; season the veal rather highly with white pepper and salt, with which cover the bottom of the dish, then lay over a few slices of ham, then the remainder of the veal, finishing with the remainder of the ham, add a wineglassful of water, and cover and bake as directed for the beefsteak pie: a bay will be an improvement.
