  1. Cut the fowl pieces as before.
  2. Put the pieces into a basin with a little salt, pepper, a spoonful of oil, two of vinegar, and a little chopped eschalot.
  3. Stir them well in the mixture and let them remain for half an hour.
  4. Have ready a quantity of batter.
  5. Take a fork and dip each piece one after the other into the batter.
  6. Let the battered pieces drop into a frying-pan with sufficient hot fat to cover them.
  7. Fry until a nice color.
  8. Serve in a pyramid, with fried parsley over, or any sauce you like under.

467. Fried Fowl.—When you have cut the pieces as before, put them into a basin with a little salt, pepper, a spoonful of oil, and two of vinegar, and a little chopped eschalot, stir them well in it, and let remain for half an hour, have ready a quantity of batter, and take a fork and dip each piece one after the other into it, and then let it drop into the frying-pan, in which is sufficient hot fat to cover them; fry a nice color, and serve in a pyramid, with fried parsley over, or any sauce you like under.
