  1. Boil and blanch old beans.
  2. Beat them in a mortar, with very little pepper and salt, some cream, and the yolk of an egg.
  3. Add a little spinach-juice for a fine colour (optional).
  4. Boil it for an hour in a basin that will just hold it.
  5. Pour parsley and butter over it.
  6. Serve bacon to eat with it.

Green Bean Pudding. Boil and blanch old beans; beat them in a mortar, with very little pepper and salt, some cream, and the yolk of an egg.
