  1. Cut two potatoes, one turnip, two heads of celery, two onions, one carrot, a bunch of sweet herbs.
  2. Put them all into a stewpan.
  3. Cover close.
  4. Draw them gently for twenty minutes.
  5. Put in two quarts of good broth.
  6. Let it boil gently.
  7. Simmer for two hours afterwards.
  8. Strain through a fine sieve.
  9. Put it into your pan again.
  10. Season with pepper and salt.
  11. Let it boil up.

Vegetable Soup. No. 4. Cut two potatoes, one turnip, two heads of celery, two onions, one carrot, a bunch of sweet herbs; put them all into a stewpan; cover close; draw them gently for twenty minutes, then put two quarts of good broth, let it boil gently, and afterwards simmer for two hours. Strain through a fine sieve; put it into your pan again; season with pepper and salt, and let it boil up.
