  1. Half roast the duck.
  2. Put the duck into some good gravy with a little mint and three or four sage-leaves chopped.
  3. Stew this for half an hour.
  4. Thicken the gravy with a little flour.
  5. Throw in half a pint of green peas boiled, or some celery (in which case omit the mint).
