  1. Put two dozen oysters into a stewpan with their own liquor.
  2. When it boils add a spoonful of water.
  3. When the oysters are done drain them in a sieve, and let the liquor settle.
  4. Then pour it off clear into another vessel.
  5. Beard the oysters.
  6. Add a pint of jelly gravy to the liquor.
  7. Add a piece of butter and two spoonfuls of flour to thicken it.
  8. Let this boil fifteen minutes.
  9. Then throw in the oysters, and let it stand.
  10. Take a beef-steak, pare it neatly round, and dress it as usual.
  11. When done, lay it on a hot dish, and pour the sauce and oysters over it.

Beef Steaks and Oysters.
