  1. Boil a quantity of vinegar proportionate to that of the almonds to be pickled.
  2. Skim the vinegar.
  3. Put salt, mace, ginger, Jamaica and white pepper into the vinegar.
  4. Put the mixture into a jar and let it stand until cold.
  5. Throw your almonds into the liquor.
  6. Ensure the liquor covers the almonds.

Green Almonds. Boil a quantity of vinegar proportionate to that of the almonds to be pickled, skim it, and put into it salt, mace, ginger, Jamaica and white pepper. Put it into a jar, and let it stand till cold. Throw your almonds into the liquor, which must cover them.
