  1. Boil whole spice in the white wine and water.
  2. Beat the eggs very well, putting away half the whites.
  3. Take the wine from the fire.
  4. Add the thoroughly beaten eggs to the wine.
  5. Stir the whole together.
  6. Set it on a very slow fire, stirring the whole time, until it is thick.
  7. Sweeten with sugar.
  8. Sprinkle on top with beaten spice, cinnamon, and nutmeg.

Posset. Take a quart of white wine and a quart of water; boil whole spice in them; then take twelve eggs, and put away half the whites; beat them very well, and take the wine from the fire; then put your eggs, being thoroughly beaten, to the wine. Stir the whole together; then set it on a very slow fire, stirring it the whole time, till it is thick. Sweeten it with sugar, and sprinkle on it beaten spice, cinnamon, and nutmeg.
