  1. Cut your leg from the loin.
  2. Boil the leg three quarters of an hour.
  3. Cut the loin in handsome steaks.
  4. Beat them with a cleaver.
  5. Fry them a good brown.
  6. Stew them a little in strong gravy.
  7. Put your leg on the dish, and lay your steaks round it.
  8. Pour on your gravy.
  9. Lay round lumps of stewed spinage, and crisped parsley on every steak.
  10. Send it to the table with gooseberry sauce in a boat.

To boil a Leg of LAMB and Loin fried. CUT your leg from the loin, boil the leg three quarters of an hour, cut the loin in hand- some steaks, beat them with a cleaver, and fry them a good brown, then stew them a little in strong gravy, put your leg on the dish, and lay your steaks round it, pour on your gravy, lay round lumps of stewed spinage, and crisped par- sley on every steak, send it to the table with gooseberry sauce in a boat.
