  1. Pare five dozen of lemons very thin.
  2. Put the peels into five quarts of French brandy, and let them stand fourteen days.
  3. Make the juice into a syrup with three pounds of single refined sugar.
  4. Boil fifteen gallons of water with forty pounds of single refined sugar for half an hour.
  5. Put the sugar-water mixture into a tub.
  6. When cool, add to it one spoonful of barm.
  7. Let it work two days.
  8. Tun it and put in the brandy, peels, and syrup.
  9. Stir them all together.

To make LEMON WINE to drink like CITRON WATER. PARE five dozen of lemons very thin, put the peels into five quarts of French brandy, and let them stand fourteen days, then make the juice into a syrup with three pounds of single refined sugar; when the peels are ready, boil fifteen gallons of water with forty pounds of single re- fined sugar for half an hour, then put it into a tub, when cool add to it one spoonful of barm, let it work two days, then tun it and put in the brandy, peels, and syrup, stir them all together
