  1. Mix a spoonful of barm in the flour, with a little salt, and make it into a light paste with warm water.
  2. Let it lie one hour.
  3. Then make it up into round balls, and tie them up in little nets, and put them in a pan of boiling water.
  4. Do not cover them, it will make them sad, nor do not let them boil so fast as to let the water boil over them.
  5. Turn them when they have been in six or seven minutes, and they will rise through the net and look like diamonds.
  6. Twenty minutes will boil them.
  7. Serve them up, and pour sweet sauce over them.

To make a Barm Pudding.
