  1. Take a side of salmon when split, and the bone taken out and scaled.
  2. Strew over the inside pepper, salt, nutmeg, and mace, a few chopped oysters, parsley, and crumbs of bread.
  3. Roll it up tight.
  4. Put it into a deep pot.
  5. Bake it in a quick oven.
  6. Make the common fish sauce and pour over it.
  7. Garnish with fennel, lemon, and horse-radish.

To make Rolled SALMON. TAKE a side of salmon when split, and the bone taken out and scaled, strew over the inside pepper, salt, nutmeg, and mace, a few chopped oysters, parsley, and crumbs of bread, roll it up tight, put it into a deep pot, and bake it in a quick oven, make the common fish sauce and pour over it.—Garnish with fennel, lemon, and horse-radish.
