  1. Beat half a pound of blanched almonds fine, with a little rose water.
  2. Add half a pound of fine sugar, pounded and sifted.
  3. Add fifteen eggs, leaving out half the whites.
  4. Add the rind of a lemon grated very fine.
  5. Put a few almonds in the mortar at a time, and put in by degrees about a tea-cupful of rose water; keep throwing in the sugar; when you have done the almonds and sugar together a little at a time till they are all used up, then put it into your pan with the eggs.
  6. Beat them very well together.
  7. Bake for half an hour.
  8. It must be a light brown.

To make a Hanover Cake or Pudding.
