  1. put the juice of four Seville oranges, and the out-rind of one pared exceeding fine, into a tossing-pan
  2. add one pint of water, and eight ounces of sugar
  3. beat the whites of five eggs
  4. set it over the fire
  5. stir it one way till it grows thick and white
  6. strain it through a gauze sieve
  7. stir it till it is cold
  8. beat the yolks of five eggs exceeding well
  9. put the beaten yolks into your tossing-pan

ORANGE CREAM. TAKE the juice of four Seville oranges, and the out-rind of one pared exceeding fine, put them into a tossing-pan, with one pint of water, and eight ounces of sugar, beat the whites of five eggs, set it over the fire, stir it one way till it grows thick and white, strain it through a gauze sieve, stir it till it is cold, then beat the yolks of five eggs exceeding well, put it in your tossing- pan
