  1. Get elder buds when they are the size of hop buds.
  2. Put them into a strong salt and water for nine days, and stir them two or three times a day.
  3. Put them into a brass pan, cover them with vine leaves, and pour the water on them that they came out of.
  4. Set them over a slow fire till they are quite green.
  5. Make a pickle for them of allegar, a little mace, a few shallots, and some ginger sliced.
  6. Boil the pickle ingredients two or three minutes.
  7. Pour the pickle upon your buds.
  8. Tie them down, and keep them in a dry place for use.

To pickle ELDER BUDS.
