  1. Dress the hair of a calf's head as before.
  2. Boil the calf's head half an hour.
  3. When boiled, cut it in pieces half an inch thick, and one inch and a half long.
  4. Put it into a stew-pan with two quarts of veal gravy, and salt to your taste.
  5. Let it stew one hour.
  6. Then put in a pint of Madeira wine, half a tea-spoonful of Chyan pepper, truffles and morels.

MOCK TURTLE a second Way. DRESS the hair of a calf's head as before, boil it half an hour, when boiled cut it in pieces half an inch thick, and one inch and a half long, put it into a stew-pan, with two quarts of veal gravy, and salt to your taste; let it stew one hour, then put in a pint of Madeira wine, half a tea-spoonful of Chyan pepper, truffles and morels
