  1. Boil soles in salt and water.
  2. Bone and drain the soles.
  3. Lay the soles on a dish with the belly up.
  4. Boil some spinach.
  5. Pound the spinach in a mortar.
  6. Boil four eggs hard.
  7. Chop the egg whites and yolks separately.
  8. Lay green (spinach), white (egg white), and yellow (egg yolk) amongst the soles.
  9. Serve the soles with melted butter in a boat.

To marinate Soles. BOIL them in salt and water, bone and drain them, lay them on a dish with the belly up, boil some spinage, and pound it in a mortar, then boil four eggs hard, chop the whites and yolks separate, lay green white and yellow amongst the soles, serve them up with melted butter in a boat.
