  1. Wash two anchovies, put them into a saucepan, with one glass of white wine, and two of water, half a nutmeg grated, and a little lemon peel.
  2. When it has boiled five or six minutes, strain it through a sieve.
  3. Add to it a spoonful of white wine vinegar.
  4. Thicken it a little.
  5. Then put in near a pound of butter rolled in flour.
  6. Boil it well, and pour it hot upon your fish.

To make WHITE FISH SAUCE.
