  1. Take the large French walnuts full grown, but not shelled.
  2. Pare them till you see the white appear.
  3. Put them in salt and water as you do them.
  4. Have ready boiling a large saucepan full of soft water.
  5. Boil them in it five minutes.
  6. Take them up, and lay them betwixt two cloths till you have made a thin syrup.
  7. Boil them gently in it for four or five minutes.
  8. Then put them in a jar, stop them up close, that no steam can get out, if it does it will spoil the colour.
  9. The next day boil them again.
  10. When they are cold make a fresh thick syrup, with two or three slices of ginger and a blade of mace.
  11. Boil and skim it well.
  12. Then give your walnuts a boil in it.
  13. Put them in glass jars, with papers dipped in brandy laid over them, and tie bladders over them to keep out the air.

To preserve Walnuts white.
