  1. Soak a teacupful of hominy in water all night.
  2. Cook the soaked hominy in milk for 6 hours with a pinch of salt, until it resembles porridge.
  3. When ready to serve, add 3 eggs, 2 ozs. of fresh butter, and 3 tablespoonfuls of grated Parmesan cheese to the cooked hominy.
  4. Mix the ingredients well.
  5. Bake the mixture in a pie dish.
  6. Cut the baked hominy cheese with a cutter.
  7. Serve on a napkin.

Hominy Cheese. Soak a teacupful of hominy in water all night; then cook in milk 6 hours with a pinch of salt, till it is like porridge. When wanted, add 3 eggs, 2 ozs. fresh butter, and 3 table-spoonfuls grated Parmesan. Bake in a pie dish, and cut with a cutter, and serve on a napkin.
