  1. Wash a tablespoonful of pearl barley well in spring water.
  2. Pour over it a quart of boiling water, the juice of a lemon, and half the rind peeled very thin.
  3. When cold pour the barley water off the dregs, strain it, and add a wineglassfuls of sherry or Madeira; sweeten with sugar to your taste.

Summer Beverage. No. 1. “A pleasant and safe beverage.” Wash a tablespoonful of pearl barley well in spring water. Pour over it a quart of boiling water, the juice of a lemon, and half the rind peeled very thin. When cold pour the barley water off the dregs, strain it, and add a wineglassfuls of sherry or Madeira; sweeten with sugar to your taste.
