  1. Rub 3 ozs. butter in a tablespoonful of flour.
  2. Add 1/4 pt. water, a spoonful of white vinegar, a little white pepper and salt.
  3. Stir over the fire until it boils.
  4. When about the thickness of cream and quite smooth, take it off and stir it a little longer before serving.
