  1. Wipe the walnuts very clean.
  2. Lay them in strong salt and water twenty-four hours.
  3. Take them out and wipe them very clean.
  4. Have ready a skillet of water boiling.
  5. Throw the walnuts in, let them boil a minute, and take them out.
  6. Lay them on a coarse cloth.
  7. Boil your sugar as above.
  8. Give your walnuts a scald in the sugar.
  9. Take them up and lay them to cool.
  10. Put them in your preserving-pot.
  11. Pour on your syrup as above.

To preserve Walnut green. WIPE them very clean, and lay them in strong salt and water twenty-four hours; then take them out, and wipe them very clean, have ready a skillet of water boiling, throw them in, let them boil a minute, and take them out. Lay them on a coarse cloth, and boil your sugar as above; then set give your walnuts a scald in the sugar, take them up and lay them to cool. Put them in your preserving-pot, and pour on your syrup as above.
