  1. Scald them in hot water.
  2. Rub them with salt well.
  3. Blanch them, that is take off the black dirty skin.
  4. Let them on in cold water.
  5. Let them simmer till they begin to be tender.
  6. Take them out and flour them.
  7. Broil them on the gridiron.
  8. In the mean time take a little good gravy, a little mustard, a little bit of butter rolled in flour.
  9. Give it a boil.
  10. Season it with pepper and salt.
  11. Lay the sounds in your dish, and pour the sauce over them.

Cod-Sounds broiled with Gravy. SCALD them in hot water, and rub them with salt well; blanch them, that is take off the black dirty skin, then let them on in cold water, and let them simmer till they begin to be tender; take them out and flour them, and broil them on the gridiron. In the mean time take a little good gravy, a little mustard, a little bit of butter rolled in flour, give it a boil, season it with pepper and salt, lay the sounds in your dish, and pour the sauce over them.
