  1. Boil the rice in water with cinnamon until the water is all wasted.
  2. Take great care it does not burn.
  3. Add milk and beaten egg yolk.
  4. Keep it stirring.
  5. When it boils, take it up.
  6. Sweeten to your palate.

To make Rice Milk. TAKE half a pound of rice, boil it in a quart of water, with a litter cinnamon. Let it boil till the water is all wasted; take great care it does not burn, then add three pints of milk, and the yolk of an egg beat up. Keep it stirring, and when it boils take it up. Sweeten to your palate.
