  1. Put the oatmeal into a broad deep pan.
  2. Cover it with water.
  3. Stir it together and let it stand twelve hours.
  4. Pour off that water clear.
  5. Put on a good deal of fresh water.
  6. Shift it again in twelve hours, and so two or more.
  7. Pour off the water clean.
  8. Strain the oatmeal through a coarse hair-sieve.
  9. Pour it into a sauce-pan, keeping it stirring all the time with a stick till it boils and is very thick.
  10. Pour it into dishes.
  11. When cold turn it into plates, and eat it with what you please.
