beaten mace, cloves, and nutmeg to your palate ↝ Oil, nutmeg butter [Fats and Oils]
a pound of currants washed very clean ↝ Currants, european black, raw [Fruits and Fruit Juices]
a pound of raisins stoned and chopped fine ↝ Raisins [Dried fruits]
half a pint of sack

Mix all well together.
Boil it in the calf's bag two hours.
Carry it to table in the bag it is boiled in.

To make Sauce with Fruit.
Take the meat and suet as above-mentioned, and flour, with beaten mace, cloves, and nutmeg to your palate, a pound of currants washed very clean, a pound of raisins stoned and chopped fine, half a pint of sack; mix all well together, and boil it in the calf's bag two hours. Carry it to table in the bag it is boiled in.
