  1. Rub one pound of fine flour into two ounces of good butter till quite smooth.
  2. Mix into the flour and butter two ounces of castor sugar and half an ounce of cream of tartar.
  3. Dissolve a quarter of an ounce of bicarbonate of soda in half a pint of cold milk.
  4. Mix the dissolved soda and milk into the flour mixture into a stiff dough.
  5. Roll the dough out about an inch thick on a floured slab or board.
  6. Cut the dough into any desirable shapes.
  7. Place the cut shapes on a floured surface.

Scotch Scones.
