  1. Put one pound of Patna rice in a stewpan with enough cold water to cover it, with a pinch of salt.
  2. Bring to the boil, strain off, and wash the rice in cold water.
  3. Put it in about three quarts of boiling water, and cook for twelve to fifteen minutes.
  4. Strain it off in the colander, pour a little hot water over it, put a cloth over the colander, and put the rice to dry in the screen for two or three hours.
  5. If properly prepared every grain will be separate.
