  1. Cover your dish with a good crust.
  2. Put at the bottom of it a layer of sliced pippins.
  3. Then put a layer of mutton steaks, cut from the loin, well seasoned with pepper and salt.
  4. Then put another layer of pippins.
  5. Peel some onions, slice them thin, and put a layer of them over the pippins.
  6. Then put in a layer of mutton, and then pippins and onions.
  7. Pour in a pint of water.
  8. Close up your pie, and send it to the oven.

Devonshire Squab Pie. COVER your dish with a good crust, and put at the bottom of it a layer of sliced pippins, and then a layer of mutton steaks, cut from the loin, well seasoned with pepper and salt. Then put another layer of pippins, peel some onions, slice them thin, and put a layer of them over the pippins. Then put in a layer of mutton, and then pippins and onions. Pour in a pint of water, close up your pie, and send it to the oven.
