  1. Put a little butter into your stew-pan, with a slice of ham, a faggot of parsley and sweet-herbs, and an onion stuck with two cloves.
  2. Let them stew over a slow fire a few minutes.
  3. Add a little flour, some good broth, and a piece of lemon-peel.
  4. Put in your oysters, and let them simmer till they are thoroughly hot.
  5. Thicken with the yolks of two eggs, a little cream, and a bit of good butter.
  6. Take out the ham, faggot, onion, and lemon-peel.
  7. Add the squeeze of a lemon.
  8. Give the whole a shake in the pan.
  9. When it simmers put it into your dish, and serve it up.
