  1. Gather radish-pods when they are quite young.
  2. Put them into salt and water all night.
  3. The next day, boil the salt and water they were laid in.
  4. Pour the boiling salt and water upon the pods and cover the jar close to keep in the steam.
  5. When it is nearly cold, make it boiling hot and pour it on again.
  6. Continue doing so till the pods are quite green.
  7. Put them into a sieve to drain.
  8. Make a pickle for them of white wine vinegar, with a little mace, ginger, long pepper, and horse-radish.
  9. Pour the pickle boiling hot upon your pods.
  10. When it is almost cold, make your vinegar twice as hot as before, and pour it upon them.
  11. Tie them down with a bladder.
  12. Set them in a dry place.

Radish Pods. GATHER your radish-pods when they are quite young, and put them into salt and water all night.
