  1. Beat the eggs as fine as you can.
  2. Strain them through a hair sieve.
  3. Put the beaten eggs into a frying-pan with hot butter.
  4. Add ham scraped fine and shred parsley.
  5. Season with pepper, salt, and nutmeg.
  6. Fry it brown on the under side.
  7. Lay it on your dish without turning.
  8. Hold a hot salamander over it for half a minute to remove the raw look.
  9. Garnish with curled parsley.
  10. Serve it up.

Amulets. TAKE six eggs, beat them up as fine as you can, strain them through a hair sieve, and put them into a frying-pan, in which must be a quarter of a pound of hot butter. Throw in a little ham scraped fine, with shred parsley; and season them with pepper, salt, and nutmeg. Fry it brown on the under side, and lay it on your dish, but do not turn it. Hold a hot salamander over it for half a minute, to draw the raw look of the eggs. Stick curled parsley in it, and serve it up.
