  1. When you have made a good crust, take a piece of fresh salmon, well cleansed, and season it with salt, mace, and nutmeg.
  2. Put a piece of butter at the bottom of your dish, and then lay in the salmon.
  3. Melt butter in proportion to the size of the crust, and then take a lobster, boil it, pick out all the flesh, chop it small, bruise the body, and mix it well with the butter.
  4. Pour it over your salmon, put on the lid, and let it be well baked.
